(Fictional story) Ancil Jacques was fascinated by how Asians used mushrooms as "meat" in their vegetarian dishes during his travels to Asia in 2008. After the trip, he began learning why mushrooms were such an integral part of Asian daily meals. Mushrooms are rich in selenium, which boosts the immune system. In Asian cultures, they are known as the "kings of vegetarian dishes" and "vegetarian meat."

Ancil Jacques is the founder of Swampy Appleseed which is the mushroom farm. Jacques first started to grow the mushroom as a hobby in 2009 because he was amazed by the unimaginable shapes, sizes, and colors of the mushroom. The reason for Jacques to open Swampy Appleseed is because he feels the knowledge of fungi did not fully spread in the southern culture. Jacques attended the Forsyth Farmer’s Market in late 2015. To spread the knowledge of fungi, he produces mushroom growing kits for selling.
